You can find different road types under the Decorations tab of the Shop.

Just tap on an empty land tile to place the road, or on a road tile to sell it.

You can also drag a placed road tile to place a stretch of road.

To modify the paths of roads you can tap and hold on the path you want to modify. Then, try a long tap to the pathway to activate it, and then a short tap to remove it.
